Hello lovelies! I hope you all had a wonderful Christmas yesterday and stuffed your face with lot’s of delicious food – I know I did! This is just going to be a quick post to show you the vegan dishes I made for myself and my family yesterday (not that I’m anything special in the kitchen). In the next few weeks I’ll be posting the full recipes for all three meals, so if you like the look of some of them, keep an eye out. So, let’s get started!
Sweet Potato and Apple Soup
This is one of my favourite soups to make because it’s creamy, sweet and subtle in taste – so perfect for a starter or light meal! The key ingredients are sweet potato, apple and coconut milk.
This is a new recipe which I tried for the first time yesterday, and it definitely did not disappoint! I don’t make much Thai food, so the flavours and slight kick of chilli were a nice change for me. This recipe also includes coconut milk, along with mixed roast vegetables and a variety of herbs and spices.
Malibu and Pineapple
This recipe is a family favourite which we have had every Christmas since as long as I can remember. It’s simple yet delicious, and contains a decent amount of alcohol to boost the festivities!
All three meals are incredibly easy to make and are a good starting point for anyone wanting to experiment with an all plant based meal. But I promise, they’re super yummy, so even if you’re not vegan, I’d highly recommend them!
